Apple Fiber Deli Crackers are just as good as national brand crackers, except they have no added sugar and are a significant source of dietary fiber.
Pre-heat oven to 310°. Combine all dry ingredients in a food processer bowl. Blend them by pulsing a few times. Whisk together the oil, corn syrup, water and vanilla in a separate bowl; add it to the food processer and blend until a loose dough forms. Transfer it to a separate bowl and knead the dough until the dough is fully developed. Allow dough to rest 10 minutes. Roll out dough to a 1/16” thickness. Use dusting flour sparingly. Cut out 1” square crackers with a fluted pastry wheel. Dock each cracker with a fork two or three times. Place unbaked crackers on parchment lined cookie sheet and bake for 10 to 15 minutes. Reduce temperature to 225° and bake for 10 minutes. Remove from oven and allow to cool on the sheet for 10 minutes; then move to a cooling rack.
Apple fibers fit well into dry mix beverages such as smoothies; bakery items including breads, granola bars, and dry mixes; fruit preparations such as pie fillings; and, topical seasonings, extruded snacks, and as a water binder in meat products.
