Apple Fiber Mini Muffins are gluten free muffins from the pulp and skins of Pacific Northwest Apples. They are naturally high in soluble and insoluble fibers and a good source of polyphenols. Enjoy them “au naturel” or dipped in coffee or milk.
Chocolate Chips or White Chocolate Chips (1/2 cup)
Apple Granules
Blend dry ingredients together. In a separate bowl, beat eggs. Pour in oil and whisk together. Dump dry mix on top and form into a dough. Fold in 2 tbsp of chocolate or white chocolate chips (if desired). Place mini muffin cups in pan, spoon out dough to cups. Bake at 350 for 10 to 12 minutes. Batch makes 18 mini muffins.
Apple fibers fit well into dry mix beverages such as smoothies; bakery items including breads, granola bars, and dry mixes; fruit preparations such as pie fillings; and, topical seasonings, extruded snacks, and as a water binder in meat products.
