This plant-based jerky is a protein and nutrient rich snack perfect at any time of the day. Add dry apple pieces and apple fiber and the nutritive benefits only get better!

Bring 2/3 cup of water to a boil, add TVP and stir; allow it to rest 10-12 minutes.
In a bowl, blend the mushroom, apple fiber and pieces, and the jalapeno, set aside.
Mix the salt and xanthan gum, set aside.
To a food processer, add the following ingredients: kidney beans, oil, tomato powder, soy sauce powder, nutritional yeast, cumin, paprika, chili powder, garlic, onion, oregano, liquid smoke, water and red beet powder. Mix for up to 20 seconds until a puree forms. Add the rehydrated TVP to the food processer and mix another 10-15 seconds. Add the dry vegetable blend and mix for 15 seconds. Allow the dough to rest 5 minutes. Add the salt/xanthan gum; mix for 30 seconds. Turn out the dough to another bowl and add wheat gluten. Mix by hand; the mix will be soft and elastic. Knead the dough for 3 to 5 minutes; allow it to rest for 10 minutes.
Spoon dough into a dessert decorating tool such as a Wilton Dessert Decorator/Cake Icing Decorator. Using the ribbon tip, extrude ½” x 2” strips of dough onto a parchment lined dehydrator rack. For a spicy jerky, sprinkle black pepper onto the dough strips. Place racks into dehydrator; set time and temperature according to manufacture instructions. Finished jerky should be firm and slightly pliable.
Apple products fit well into dry mix beverages such as smoothies; bakery items including breads, granola bars, and dry mixes; fruit preparations such as pie fillings; and, topical seasonings, extruded snacks, and as a water binder in meat products.
