This snack bar combines the healthful benefits of cranberries with plant-based proteins from nuts and peas. Each 18g bar contains 3g of protein and the dry equivalent of 3 fresh cranberries.
Prebake oven to 325° F. In a food processor, pulse oats, nuts and seeds until a flour like meal forms. Add pea protein, pulse to disperse. Dump blend into a large bowl; add and disperse cranberry pieces. In a small bowl, melt the white chocolate and coconut oil until liquid. Add honey, flavors, and cranberry JC; whisk briskly until homogenous. Combine the dry and wet mixes, mix by hand until a dough forms. Turn dough out to a greased baking pan. Flatten dough to even thickness; bake for 12 minutes. Remove pan from oven and allow it to cool for 20 minutes in the pan; invert the pan and pop the bar onto wax paper. When cooled, cut bar into single portions.

They can be used in beverages, both dry mixes and juices such as smoothies, function drinks; bakery items including breads, granola bars, and dry mixes; and, fruit preparations such as pie fillings.
