Combine the goodness of dehydrated apples and cranberries and gluten free ingredients for a delicious treat when the feeling hits. Try them frozen with ice cream!
Preheat oven to 350°. In a mixing bowl, combine GF flour, GF oats, cinnamon, baking soda, and salt, set aside. Using a stand mixer, cream the butter and brown sugar until well combined. Add the egg and vanilla extract. Add the flour blend and water to the creamed ingredients; mix until combined. Fold in apple dices and cranberry pieces until evenly dispersed. Using a medium to small cookie scoop, drop dough on to parchment lined cookie sheet. Bake at 350° for 15 to 17 minutes. When ready, allow cookies to cool on the sheet for 5 minutes. Then place on a rack to cool to room temperature.
